Peanut Butter Chocolate Chip Cookies #SRC

I am so excited for today's post!  I finally get to join the Secret Recipe Club!!  Joining this group was one of the first goals I set for myself when I started my blog.  I was so thrilled when I got my invitation last month!!

My first assigned blog was Fearless Homemaker!  This was a new to me blog and I loved spending time exploring Amy's site!  Amy's blog isn't just a foodie blog ~ she covers entertaining & throws in some DIY crafting too!  Plus she's such a stinkin' cute pregnant lady!  {CONGRATS AMY!!}



So, I was given about 2 & 1/2 weeks to explore Amy's blog, pick out a recipe, make it & blog it.  You would think with over 2 weeks, I would be well ahead of the game & my post would be ready to go days, maybe even a week, in advance.  I'm just going to be honest with y'all and lay it out there ~ I'm writing this post Sunday night, with about 12 hours to spare from my deadline.  I found so many great recipes on Fearless Homemaker that I couldn't decide.  I debated all the way up until Saturday night on recipes until I finally said holy crap, I'm about to run out of time!  Go with peanut butter and chocolate ~ you can't fail with peanut butter & chocolate!  So I give you Amy's Soft Peanut Butter Chocolate Chip Cookies!




PEANUT BUTTER CHOCOLATE CHIP COOKIES
YIELD: about 4 dozen cookies
 
 
INGREDIENTS:
  • 1/2 cup (1 stick) butter, softened to room temperature
  • 1/2 cup light brown sugar
  • 1/4 cup sugar
  • 3/4 cup creamy peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1 & 1/4 cups flour
  • 1/2 cup semi-sweet chocolate chips

DIRECTIONS:
  1. In the bowl of a stand mixer, cream together the butter and both sugars on medium speed. Mix in the peanut butter, egg, and vanilla. Slowly mix in the baking soda and flour, being sure not to not overmix. Fold in the chocolate chips. Chill the dough for at least 30 minutes.        
  2. Preheat your oven to 350 degrees. Drop chilled dough by 1/2 tablespoonfuls onto a parchment or silpat-lined cookie sheet. Bake for 8-10 minutes. Cookies will be soft and may appear not completely done, but they will firm up as they cool.        
  3. Allow to cool completely on a wire rack and enjoy!

  3. It does sneak up on you pretty fast! I usually schedule weeks in advance with my regular recipes, but I didn't get this month up until Saturday. Oopsies.
