Peach Streusel Muffins

 Peach Streusel Muffins were a MUST when we came home with this whole box of peaches. I mean, fresh peaches are yummy, but I decided these would be great for our church 4th of July potluck. I added them to the serving tray with some fresh peaches, so they even looked pretty! I love just about anything with streusel on the top, and these were no exception. They are BEST if you eat them fresh out of the oven, so you may want to consider that when you make them. Enjoy! 

These Peach Streusel Muffins are perfect for summer breakfast!  Eat them fresh out of the oven!


Peach Streusel Muffins
{from MyRecipes}  

Ingredients:
1/4 cup butter {softened}
1/3 cup sugar
1 large egg
2 1/3 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk
1 teaspoon vanilla extract
1 1/2 cups fresh peaches, chopped and peeled  

Topping:
1/4 cup sugar
3 Tablespoons flour
1/4 teaspoon ground cinnamon
2 1/2 tablespoons chilled butter

Directions:
1. Beat the softened butter, sugar, and egg until creamy and well incorporated.
2. In a small bowl, stir together the flour, baking powder, and salt. Add the flour mixture, alternately with the milk until everything is mixed well.
3. Gently stir in the peaches and vanilla extract.
4. Prepare your muffin tin by lining it with paper liners. Spoon the muffin mixture into the lined muffin tin, filling them almost to the top.
5. In a small bowl, mix the sugar, flour, cinnamon, and chilled butter. It should look crumbly. Sprinkle the topping evenly over the muffins.
6. Bake at 375 for about 20-25 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean.
Enjoy with a cup of coffee for breakfast!

  1. Hi Carrie and Jamie, I was just sharing posts via Triberr and instantly stopped what I was doing and came over to check out this recipe. This sounds wonderful. We have an abundance of peaches available through farmer markets this summer and I will be making this recipe. :-)Back to share more Triberr posts.

  2. Hey Carrie and Jamie, these look pretty tasty. Have you tried them with apricots or plums? I guess that could be an easy substitution. I recently joined this site, it’s pretty great for a stay at home mom, learning alot more about pastry and baking each day. http://www.pastrytraining.com – maybe you will like it as well!
